    Paleo Honey Glazed Carrots

    This recipe for paleo honey glazed carrots is simple and easy to prepare. Honey glazed carrots are a healthy side dish with an amazing flavor. The carrots are tender and the honey gives it a delicious sweet flavor as it roasts. This recipe is the perfect side dish and works great at your Thanksgiving or holiday table! You can pair it with mashed potatoes or dairy-free scalloped potatoes and pork chops for a healthy balanced meal!

    Ingredients for Honey Glazed Carrots

    • carrots: for this recipe you will need about 2 pounds of peeled carrots. You can also use baby carrots if you prefer.
    • honey: honey is a paleo friendly sweetener that gives this recipe a delicious sweet flavor
    • ghee: ghee is a paleo friendly butter substitute that works great in this recipe. Ghee is lactose free but if you prefer to keep things strictly dairy free, you can use your favorite dairy-free vegan butter.
    • minced garlic, ginger, cinnamon, salt and pepper: these seasonings will add to the flavor of the honey glazed carrots
    • Optional: fresh parsley or fresh thyme for garnish

    How To Prepare

    STEP 1: Cut the carrots on a diagonal making sure the carrot slices are the same length and thickness. You can skip this step if you use baby carrots instead.

    STEP 2: In a small bowl, mix the honey, garlic, melted ghee and spices. Add the sliced carrots and toss to combine.

    STEP 3: Place the glazed carrots onto a baking sheet prepared with parchment paper and spread them out, making sure all carrots are on a single layer.

    STEP 4: Roast the carrots at 400 degrees for about 20-25 minutes, tossing halfway through. They are ready when the edges are nicely browned.

    STEP 5: Transfer carrots from the sheet pan to a serving dish and sprinkle with some fresh chopped parsley for garnish. Enjoy!

    Serving Suggestions

    Serve paleo honey glazed carrots with salmon, pork chops or grilled chicken. Add come crispy air fryer potatoes and you have a healthy and well balanced meal. You can also add some garlic green beans for more vegetables.

    Yes, you can use baby carrots instead. Just skip slicing them since they are already small.

    Can I make my roasted carrots ahead of time?

    Yes, you can prep the carrots in the glaze and store in the fridge for up to 1 day before baking. You could also bake them ahead, just cook 2-3 minutes less than directed. Then reheat in the oven before serving.

    How do I store paleo honey glazed carrots?

    Store in a sealed container in the fridge for up to 3 days. Reheat in the microwave or in the oven until heated through.

    Ingredients

    • 2 pounds carrots, peeled
    • ⅓  cup honey
    • 3 garlic cloves, minced
    • 2 tablespoons melted ghee
    • 1 teaspoon cinnamon
    • ½  teaspoon ground ginger
    • ½  teaspoon salt
    • ½  teaspoon pepper
    • parsley, thyme or other herbs for garnish (optional)

    Instructions

    1. Preheat your oven to 400Fº. 
    2. Cut the carrots on a diagonal (approximately 1 inch long). Make sure the carrot slices are the same length and thickness.
    3. In a bowl, mix the honey, garlic, melted ghee and spices. Add the sliced carrots and toss.
    4. Place the glazed carrots onto a sheet pan and spread them out, making sure all carrots are on a single layer.
    5. Roast the carrots for 20-25 minutes, tossing halfway through. They are ready when the edges are nicely browned. 
    6. Transfer carrots to a serving dish and garnish with some fresh chopped parsley. Enjoy!

    Notes

    • To Store: Place leftovers in an airtight container and store for up to 3 days in the fridge.
    • To Freeze: Use a freezer-safe bag or container and store for up to 3 months.
    • For Reheating: Simply reheat in the microwave until the carrots are warmed through
