    Crispy Rosemary Potato Wedges (Baked and Air Fryer)

    Potatoes are my love language! This recipe for crispy rosemary potato wedges is a flavorful side dish that is the perfect complement to any meal. These potato wedges have only 3 ingredients and can be made in the air fryer or the oven. They are also gluten-free, paleo friendly and Whole30 compliant (just like my buffalo potato wedges!) Who needs french fries when you have these?!

    Ingredients

    These rosemary potato wedges recipe contains just 3 ingredients. Well, 5 if you count salt and pepper which I typically don't. Either way, it's as easy as it gets!

    • Russet Potatoes, unpeeled - I usually use 4 potatoes for 4 servings and I keep the peel on for the texture and taste
    • Olive oil - my favorite high quality olive oil is from Primal Kitchen Foods code "BEAUTY10" gets you a discount on their website!
    • Fresh rosemary - In a pinch you can use dried rosemary but fresh is definitely preferred
    • flaky sea salt and black pepper - I like using Maldon flaky salt for this recipe
    • Optional dipping sauces - Primal Kitchen Foods ketchup is my go to for a no sugar added condiment. You can also dip your potato wedges in ranch dressing!

    How To Prepare Potato Wedges

    STEP 1: Prior to cooking, slice your potato into wedges and place them in a container. Add cold water to the container and make sure all the potatoes are submerged. Place the container in the fridge for about an hour prior to cooking. If you are very short on time you can skip this step but the water helps remove the starch in the potatoes and makes for a crispier end result.

    Pro Tip - this is also a great way to store your potatoes to have on hand for meal prep during the week. I like to chop them up and bring them out when I'm ready to make breakfast potatoes!

    STEP 2: When you're ready to make your rosemary potato wedges, remove the potatoes from the container and place on a dry surface. Pat dry to soak up any excess moisture.

    STEP 3: Add the potato wedges to a large bowl. Then add in your salt, pepper, olive oil and chopped rosemary. Use your hands to toss and make sure all the potato wedges are as evenly covered as possible.

    STEP 4: Line a baking sheet with parchment paper and place your potato wedges in a single layer. Roast at 425 degrees for 45 minutes and flip halfway through. Garnish with more flaky salt and rosemary if desired and serve with your favorite dipping sauce.

    How to Prepare Potato Wedges in the Air Fryer

    To make these rosemary potato wedges in the air fryer, follow the same steps outlined above but instead of placing them on a baking sheet, add your potato wedges in a single layer inside your air fryer. Air fry at 400 degrees for 20 minutes shaking the basket halfway through. Garnish with more flaky salt and rosemary and serve with your favorite dipping sauce.

    What is the best way to re-heat potato wedges for leftovers?

    My preferred method to re-heat anything that is supposed to maintain a crispier texture is to air fry it. Simply add your rosemary potato wedges back to the air fryer and heat for 5 minute intervals until desired temperature and texture is reached.

    Can you put rosemary in the air fryer?

    Yes! The rosemary actually takes on a really yummy and crispy texture when air fried.

    Ingredients

    Scale
    • 4 large russet potatoes
    • 2 tbs olive oil
    • 2 sprigs fresh rosemary, chopped
    • flaky salt and pepper

    Instructions

    Prior to cooking, slice potatoes into wedges and place in a large container with water. Allow to sit in the refrigerator for about an hour.

    Oven Instructions

    1. Preheat oven to 425 degree and line a baking sheet with parchment paper
    2. Remove potato wedges from water and pat dry with a paper towel
    3. Add potato wedges to a large mixing bowl with salt, pepper, olive oil and chopped rosemary
    4. use hands to mix thoroughly and ensure each potato wedges is coated with oil
    5. bake for 45 minutes flipping halfway through
    6. garnish with more rosemary and flaky salt. Serve with ketchup or your favorite dipping sauce

    Air Fryer Instructions

    1. Repeat steps 1-4 above
    2. Place in a single layer in the air fryer and air fry for 20 minutes at 400 degrees flipping hallway through (you may need to do this in 2 batches if your air fryer is smaller)
    3. garnish with more rosemary and flaky salt. Serve with ketchup or your favorite dipping sauce
