One thing I love to eat is a good breaded chicken. I used to accomplish this with flour and breadcrumbs or Panko but once I started following a more paleo approach to nutrition, I had to find an alternative to get that nice crispy texture. Enter this recipe for paleo “bread” crumbs! This recipe is paleo and keto friendly while also being Whole30 compliant. It’s a low carb version of bread crumbs made from a perfect blend of seasonings and nuts that will give you that satisfying texture of breaded chicken.
This recipe is a combination of cashews, almonds, seasonings and a little almond flour. Truth be told, you can leave out the almond flour if you choose. I like to add it in because it’s so finally milled, it can fill in some of the gaps left after processing the nuts. This way you get bread crumbs that are different in shape, size and texture.
You can use these paleo bread crumbs to cook chicken directly on a skillet, or you can also throw it in your air fryer for an even crispier take on breaded chicken. For example, check out my recipe for air fried buffalo chicken tenders! Just replace the flour and panko with almond flour and these paleo bread crumbs for a paleo and Whole30 option! Either way you decide to cook it, I love using the dry-wet-dry method for best results.
I like to pound my chicken with a meat tenderizer down to thinner slices first as this helps things cook quicker and more evenly. You roll your chicken in a little almond flour, then pass through an egg wash and lastly coat with your paleo bread crumbs before throwing it in your skillet. Easy peasy!
You can store these in a mason jar in your pantry. Mine has been hanging out there for about a month and they are still good to go! As long as the nuts are still fresh then you’re golden.
You can make several variations of this and here I am showing you guys how to make the basic version. You can tweak seasonings to your liking and your flavor preference. I made a spicy version by throwing in some paprika and cayenne pepper in addition to this original version.Print
- 1 cup raw cashews
- 1 cup raw almonds
- 1/4 cup almond flour (optional)
- 1 teaspoon garlic salt
- 1 teaspoon onion salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried parsley
- 1/2 teaspoon salt
- *add 1 teaspoon paprika and 1 teaspoon chili powder for spicy version
- Combine all ingredients (minus the almond flour) in a food processor until it reaches a rough flour like consistency.
- Mix in almond flour with a fork
- Store in an air tight container for future use
- Serving Size: 2 Tbs
