Turn Instant Pot to Sauté mode and cook carrots, onions and celery in ghee until they begin to soften

Turn Instant Pot off sauté mode and add chicken, diced potatoes, broth and herbs. Pressure cook for 9 minutes

Use a slotted spoon to remove half of the potatoes to a mixing bowl. Add coconut milk and ghee and blend with an immersion blender.
