Step 1

Heat olive oil in a dutch oven or large pot on medium heat. Add in minced garlic and vegetables and sauté until the veggies begin to soften.

Step 2

Add in your chicken broth and bring to a boil. Once the broth is boiling, add in the rice and mix thoroughly. Cover your pot and simmer for 20 minutes.
