Protein Packed Bacon Shrimp Pasta

Description

This bacon shrimp pasta is the perfect easy weeknight meal. It's simple, healthy and packed with protein. Thanks to the use of chick pea pasta, it's also healthier and lower in carbs! 


Ingredients

Scale
  • 1 box Banza angel hair pasta (or 4 servings worth of your favorite angel hair)
  • 24 oz peeled and deveined shrimp
  • 1 bunch asparagus spears (about 20)
  • 4 slices bacon
  • Salt & Pepper to taste
  • Red pepper flakes for garnish

Instructions

  1. Cook pasta according to directions on box and set aside
  2. While pasta is cooking, cook bacon in a skillet and set aside to crumble once cooled
  3. Cook shrimp in reserved bacon grease until done, about 2 minutes per side and set aside
  4. Chop the ends off of the asparagus and microwave for 60 seconds, then sautée in the same skillet
  5. Once asparagus is tender, drain excess grease from the skillet and throw in shrimp, angel hair, bacon, salt & pepper and toss together until well mixed
  6. Sprinkle with red pepper flakes if you're feeling' spicy
  7. Divide into 4 bowls and enjoy!
