Ingredients

- 1 16 ounce bag frozen hash browns thawed (make sure to check your ingredients label as many frozen hash browns contain sugar!)
- 2 eggs (or 1 egg and 1/4 cup egg white)
- 1 Tbs ghee
- 1/2 tsp garlic powder
- salt and pepper to taste
- diced green onion for garnish (or you can toss them into your "batter")
Instructions
- mix all ingredients (minus the green onions) in a large mixing bowl
- spray waffle maker with cooking spray and once hot, add half the mixture
- Continue cooking for about 15 minutes or until potatoes are crisp and have reached a golden brown color
- Continue with the rest of the mixture for the second waffle
- Top with green onion and enjoy!
