This recipe for crispy rosemary potato wedges is a flavorful side dish that is the perfect complement to any meal. These potato wedges have only 3 ingredients and can be made in the air fryer or the oven. They are also gluten-free and Whole30 compliant
Ingredients

- 4 large russet potatoes
- 2 tbs olive oil
- 2 sprigs fresh rosemary, chopped
- flaky salt and pepper
Instructions
Prior to cooking, slice potatoes into wedges and place in a large container with water. Allow to sit in the refrigerator for about an hour.
Oven Instructions
- Preheat oven to 425 degree and line a baking sheet with parchment paper
- Remove potato wedges from water and pat dry with a paper towel
- Add potato wedges to a large mixing bowl with salt, pepper, olive oil and chopped rosemary
- use hands to mix thoroughly and ensure each potato wedges is coated with oil
- bake for 45 minutes flipping halfway through
- garnish with more rosemary and flaky salt. Serve with ketchup or your favorite dipping sauce
